According to the FDA, what is the only fish that produces real caviar?

  6. Actually, according to the FDA any fish roe may be considered Caviar. In Europe, only the roe of Sturgeon may be called Caviar. Professionally, in the Caviar industry, we do call fish roe Caviar, but are selective. For example, Paddlefish isn't a Sturgeon, but it's Caviar highly resembles Sevruga Caviar and the Spathula looks similar to a Sturgeon. Today, many even call farmed Siberian Sturgeon and White Sturgeon Osetra. In conclusion, High Quality Caviar has derived until this year from the FOUR MAIN CASPIAN SPECIES of Russian Osetra Sturgeon, Persian Osetra Sturgeon, and most scarce, the Beluga Sturgeon. www.CaviarCaviar.com has good info.All that is changing.
