jelly is gel-like - smooth and clear and jam has bits and pieces of fruit

Jelly is made from just the juice... jam is the whole fruit.

I prefer preserves, but Jam is the mushed up fruit, while jelly is clear and jelly like.

Matt is correct. Jelly also has pectin and Jam doesn't. I only know this because many years ago, I made jelly.
